Poach bass fillets in wine a covered pan for
8 minutes.
Fork eggs and bread crumbs in a measuring cup
until smooth.
Pour off wine. Add butter to cover bottom of
the dish. Pour Egg/breadcrumb mix over the
bass. Then turn the fish over so that it is
covered with the mix and sautee for 4 minutes
on a side.
